Ingredients
  

White Gravy

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1/2 tsp garlic powder
  • salt & pepper to taste

Casserole Base

  • 1 lb pork sausage or turkey sausage
  • 1 cup chopped bell peppers red and green
  • 1/2 cup chopped carrots
  • 1/2 cup chopped broccoli
  • 1/2 cup chopped onions
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook the sausage over medium-high heat until browned. Drain excess grease.
  • In a saucepan, melt butter over medium heat. Stir in flour and whisk for 1-2 minutes.
  • Slowly add milk, whisking continuously. Season with garlic powder, salt, and pepper. Simmer until thick and creamy.
  • In a baking dish, layer roasted vegetables, cooked sausage, and white gravy.
  • Top with shredded cheese and bake uncovered for 20-25 minutes until golden and bubbly.
  • Let rest for 5 minutes before serving.

Notes

For extra crunch, top with crushed buttery crackers before baking. To make it dairy-free, substitute milk with almond milk and use dairy-free cheese.
