Main Ingredients

  • 4 boneless skinless chicken breasts cut into cubes
  • 1 1/2 cups pineapple chunks fresh or canned
  • 1 red bell pepper cut into strips
  • 1 green bell pepper cut into strips
  • 1/2 cup teriyaki sauce
  • 2 tbsp soy sauce low sodium
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • green onions for garnish

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Lay out four large pieces of aluminum foil.
  • In a bowl, combine teriyaki sauce, soy sauce, olive oil, garlic powder, and black pepper.
  • Divide chicken, pineapple chunks, and bell peppers evenly among the foil sheets.
  • Drizzle the sauce mixture over each portion.
  • Fold the foil into packets and seal tightly.
  • Place foil packets on a baking sheet and bake for 20 minutes.
  • Carefully open packets and garnish with green onions before serving.

Notes

You can also grill the foil packets over medium heat for about 15 minutes instead of baking them.
