Preheat and Prepare:
Preheat your oven to 375°F (190°C).
Lightly grease a 9x13-inch baking dish.
Cook the Pasta:
Bring a large pot of salted water to a boil.
Cook the pasta according to the package instructions until it is al dente.
Drain the pasta using a colander and set aside.
Sauté Shrimp and Garlic:
In a large skillet, heat the butter and olive oil over medium heat.
Add the minced garlic and red pepper flakes, sautéing until fragrant (about 1–2 minutes).
Add the shrimp, seasoning with salt and pepper.
Cook the shrimp until they just turn pink (about 2–3 minutes per side). Remove them from the skillet and set aside.
Make the Creamy Sauce:
With the skillet still over medium heat, pour in the white wine (or chicken broth) to deglaze, scraping up any browned bits.
Allow the liquid to reduce by half (approximately 2 minutes).
Stir in the lemon juice, lemon zest, and heavy cream. Bring the mixture to a gentle simmer.
Mix in half of the Parmesan cheese until it melts into the sauce. Taste and adjust the seasoning with additional salt and pepper if needed.
Combine Pasta, Shrimp, and Sauce:
Return the cooked shrimp to the skillet.
Add the drained pasta and gently toss to coat everything evenly in the sauce.
Assemble the Bake:
Transfer the pasta and shrimp mixture into the prepared baking dish.
Evenly sprinkle the shredded mozzarella, the remaining Parmesan cheese, and, if desired, the panko breadcrumbs over the top.
Bake:
Place the dish in the preheated oven and bake for 15–20 minutes, or until the cheese is melted, bubbly, and lightly golden.
Garnish and Serve:
Remove the dish from the oven and let it stand for about 5 minutes before serving.
Garnish with extra chopped fresh parsley. Enjoy your Shrimp Scampi Pasta Bake while warm!
