Instructions
 

  • Preheat Oven:

  • Prepare the Peach Filling:
  • In a large bowl, combine the sliced peaches, 1/4 cup granulated sugar, 1/4 cup brown sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch.
  • Toss gently until the peaches are evenly coated with the sugars and spices.
  • Pour the peach mixture into the 9x13-inch baking dish, spreading it into an even layer.
  • Make the Topping:
  • In another bowl, whisk together the flour, 1/4 cup granulated sugar, 1/4 cup brown sugar, baking powder, and salt.
  • Stir in the milk, melted butter, and vanilla extract until just combined. Do not overmix; a few lumps are fine.
  • Assemble the Cobbler:
  • Drop spoonfuls of the topping over the peach filling. The topping doesn’t need to cover every bit of the peaches perfectly—it will spread out as it bakes.
  • Bake:
  • Place the baking dish in the preheated oven and bake for 40–45 minutes.
  • The cobbler is done when the topping is golden brown and the peach filling is bubbling along the edges.
  • Cool and Serve:
  • Remove from the oven and allow to cool for 5–10 minutes before serving.
