Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
In a bowl, mix the flour, paprika, garlic powder, onion powder, black pepper, and salt.
Pour the buttermilk into another bowl. Place the panko breadcrumbs in a third bowl.
Dip each piece of chicken into the flour mixture, then into the buttermilk, and finally coat with panko breadcrumbs.
Arrange chicken on the wire rack. Lightly spray with cooking spray for extra crispiness.
Bake for 40-45 minutes, flipping halfway through, until golden brown and cooked through.
Notes
For extra crispiness, let the breaded chicken rest for 10 minutes before baking.
