Ingredients
  

Chicken

  • 2 lbs chicken drumsticks or thighs

Breading

  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 cups panko breadcrumbs

Instructions
 

  • Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  • In a bowl, mix the flour, paprika, garlic powder, onion powder, black pepper, and salt.
  • Pour the buttermilk into another bowl. Place the panko breadcrumbs in a third bowl.
  • Dip each piece of chicken into the flour mixture, then into the buttermilk, and finally coat with panko breadcrumbs.
  • Arrange chicken on the wire rack. Lightly spray with cooking spray for extra crispiness.
  • Bake for 40-45 minutes, flipping halfway through, until golden brown and cooked through.

Notes

For extra crispiness, let the breaded chicken rest for 10 minutes before baking.
