Ingredients
  

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder

  • 1 egg
  • 1 tablespoon olive oil or butter
  • 1/2 ripe banana mashed, optional for sweetness
  • 1/4 cup finely chopped fruits blueberries, strawberries, or banana
  • 1 teaspoon vanilla extract optional

Instructions
 

  • In a mixing bowl, whisk together the flour, baking powder, and cinnamon (if using).
  • In another bowl, whisk the milk, egg, and olive oil or butter. If using, stir in mashed banana and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  • Fold in the chopped fruits (optional: you can mix the fruits into the batter or place them directly in the frying pan while cooking).
  • Heat a non-stick pan over medium-low heat and lightly grease it. If using a muffin tin, preheat the oven to 350°F (175°C).
  • Spoon small portions of the batter into the pan, forming mini pancakes. Cook for 1-2 minutes on each side or until golden brown. If using a muffin tin, spoon batter into cups and bake for about 10-12 minutes.
  • Allow the pancakes to cool slightly before serving to your toddler.
