Stir thoroughly to combine. Adjust salt and pepper if needed.
Stuff the Peppers:
Spoon the filling evenly into each hollowed-out bell pepper, packing it well.
Place the stuffed peppers upright in a baking dish.
Bake:
Sprinkle the remaining 1/2 cup mozzarella evenly over the tops.
Cover the baking dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.
Garnish & Serve:
Remove from the oven, garnish with fresh basil or parsley, and serve warm.
