Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, toss the potatoes with olive oil, honey, garlic powder, salt, and black pepper.
Spread the potatoes evenly on the baking sheet and sprinkle the chopped bacon on top.
Roast for 35-40 minutes, flipping halfway through, until potatoes are crispy and bacon is golden.
Remove from oven, garnish with fresh parsley, and serve warm.
Notes
For extra crispiness, broil the potatoes for the last 2-3 minutes of roasting.
