Ingredients
  

Roasted Potatoes

  • 2 lbs baby potatoes halved
  • 6 slices bacon chopped
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, toss the potatoes with olive oil, honey, garlic powder, salt, and black pepper.
  • Spread the potatoes evenly on the baking sheet and sprinkle the chopped bacon on top.
  • Roast for 35-40 minutes, flipping halfway through, until potatoes are crispy and bacon is golden.
  • Remove from oven, garnish with fresh parsley, and serve warm.

Notes

For extra crispiness, broil the potatoes for the last 2-3 minutes of roasting.
