Instructions
Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
In a large bowl, mix oats, nuts, salt, and cinnamon if using.
In a separate bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract.
Pour wet ingredients over dry ingredients and stir until everything is well coated.
Spread the granola mixture evenly onto the baking sheet.
Bake for 20-25 minutes, stirring halfway through, until golden brown.
Let cool completely, then stir in dried fruit and chocolate chips (if using).
Store in an airtight container for up to two weeks.
