Ingredients
  

Chicken and Broth

  • 2 tbsp butter
  • 1 lb chicken breast boneless, skinless
  • 6 cups chicken broth
  • 2 cups carrots diced
  • 1 cup celery chopped
  • 1 onion diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme dried

Dumplings

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 3/4 cup milk
  • 2 tbsp butter melted

Instructions
 

  • Melt butter in a large pot over medium heat. Add onions, carrots, and celery, cooking until softened.
  • Add chicken broth, chicken breast, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Remove chicken, shred it, and return to the pot.
  • In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter to form a dough.
  • Drop spoonfuls of dough into the simmering soup. Cover and cook for 15 minutes.
  • Serve warm and enjoy!

Notes

For extra flavor, add garlic or a bay leaf while simmering the broth. You can also use rotisserie chicken for a quicker version.
