Instructions
Melt butter in a large pot over medium heat. Add onions, carrots, and celery, cooking until softened.
Add chicken broth, chicken breast, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 20 minutes.
Remove chicken, shred it, and return to the pot.
In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter to form a dough.
Drop spoonfuls of dough into the simmering soup. Cover and cook for 15 minutes.
Serve warm and enjoy!
Notes
For extra flavor, add garlic or a bay leaf while simmering the broth. You can also use rotisserie chicken for a quicker version.
