  • 1/4 cup 25 g unsweetened cocoa powder
  • 1/4 tsp salt
  • For the Cookie Dough Layer:
  • 1/2 cup 115 g unsalted butter, softened
  • 1/2 cup 100 g granulated sugar
  • 1/2 cup 100 g light brown sugar, packed
  • 1 large egg at room temperature
  • 1 tsp vanilla extract
  • 1 1/4 cups 150 g all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup 175 g semisweet chocolate chips

Instructions
 

  • Preheat & Prepare Pan:
  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.
  • Make the Brownie Batter:
  • Melt Butter & Chocolate: In a microwave-safe bowl or over a double boiler, gently melt the butter with the chopped chocolate. Stir until smooth and let cool slightly.
  • Mix Wet Ingredients: In a large bowl, whisk together the granulated sugar, eggs, and vanilla extract.
  • Combine: Pour the melted chocolate mixture into the egg mixture and stir until well incorporated.
  • Fold in Dry Ingredients: Sift in the flour, cocoa powder, and salt. Gently fold the mixture until just combined (avoid overmixing).
  • Layer: Evenly spread the brownie batter into your prepared pan.
  • Prepare the Cookie Dough:
  • Cream Butter & Sugars: In a medium bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add Egg & Vanilla: Mix in the egg and vanilla extract until smooth.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  • Mix Together: Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  • Fold in Chocolate Chips: Stir in the chocolate chips evenly.
  • Assemble the Brookies:
  • Drop spoonfuls of the cookie dough evenly over the brownie batter. The cookie layer doesn’t need to cover the entire surface since it will spread as it bakes.
  • Optional: Use a spatula or the back of a spoon to lightly swirl the cookie dough into the brownie batter for a marbled look.
  • Bake:
  • Bake in the preheated oven for 25–30 minutes. The cookie dough should be set with a few moist crumbs when tested with a toothpick. (Note: The brownie layer may appear slightly underdone, which helps maintain a fudgy texture.)
  • Tip: Start checking at 25 minutes to ensure the cookie dough doesn’t overbake.
  • Cool & Serve:
  • Remove the pan from the oven and let the brookies cool completely on a cooling rack.
